The Best Pancakes

These pancakes are easy and pretty much foolproof, give them a try and let us know how you go!

You can top these however you like! Try endless combinations like maple syrup and vanilla ice-cream yum…

Ingredients

  • 2 cups plain flour
  • 4 tsp baking powder
  • 1 pinch of salt
  • 1/4 cup castor sugar
  • 1/4 tsp baking soda
  • 1 3/4 cups milk
  • 1/4 cup butter (melted)
  • 2 tsp vanilla extract
  • 1 large egg

Instructions

  1. In a mixer combine together dry ingredients.
  2. In a separate bowl whisk, the wet ingredients together.
  3. Begin slowly folding the wet ingredients into the dry ingredients. Mix together until smooth (if there are some small lumps that is okay).
  4. Set the batter aside.
  5. Heat a nonstick pan over low-medium heat use a little butter to lightly grease the pan.
  6. Pour 1/4 cup of batter (or whatever size you want your pancakes) onto the pan and spread out into a round shape with the back of your spatula.
  7. When bubbles begin to appear on the surface, flip with a spatula and cook until golden on both sides.
  8. Do this with the rest of the batter until you have a stack of fluffy pancakes.
  9. Enjoy!
