Chewy Anzac Biscuits

Chewy or Crunchy ANZACS?

These are great all year round and if you prefer crunch or chewy ANZACS you can make them easily with this recipe.

Ingredients

  • 1 cup Uncle Tobys Traditional Rolled Oats
  • 1 cup plain flour
  • 2/3 cup brown sugar
  • 2/3 cup desiccated Coconut
  • 125g butter, chopped
  • 2 tbsp golden syrup
  • 1/2 tsp bicarbonate Soda

Instructions

  1. Preheat oven to 160c fan-forced. 
  2. Line three flat baking trays with baking paper.
  3. Mix the rolled oats, flour, brown sugar and coconut in a bowl.
  4. In a separate bowl add butter, golden syrup and 2 tablespoons cold water into a microwave-safe bowl and heat for 3 minutes or until melted. 
  5. Add in the bicarbonate of soda.
  6. Pour the butter mixture over the oat mixture and stir to combine. 
  7. Roll level tablespoons of mixture into balls.
  8. Place on trays, 5cm apart and flatten slightly.
  9. For chewy biscuits, bake for 10 to 12 minutes or until lightly golden. For crunchy biscuits, increase cooking time to 12-15 minutes. 
  10. Leave on the baking trays for 5 minutes before transferring to a rack to cool completely.
