Pork Shoulder Roast

The perfect pork roast!

This is a super simple recipe that is easy to follow and tastes amazing.

Ingredients

  • 2kg boneless pork shoulder
  • 1/4 cup olive oil
  • 1 Tbsp Salt

Instructions

  • Unwrap the pork roast, place it in baking tray and pat the skin dry with a paper towel.
  • Sit it in the fridge for an hour.
  • Remove the roast from the fridge 1 hour before cooking and preheat the oven to 240c.
  • Using a sharp knife, score the rind in 3cm intervals and thoroughly pat the skin dry with paper towels.
  • Drizzle the olive oil over the roast and massage in. Sprinkle the salt over the skin and massage in. Make sure the roast is skin up.
  • Cook for 50 minutes or until the rind becomes golden and crackle, then turn down the temperature to 180c and continue to cook for 1 hour or until cooked.
  • Remove from the oven and allow to sit for 20 minutes.
  • Enjoy!
