The Best Cob Loaf

Who doesn’t love a good cob loaf!?

Want to add something extra to your next BBQ or Party? Try our delicious cob loaf recipe. Dip into this creamy dish with the crusty bread or maybe even breadsticks? Add whatever you like to the sides of this tasty cob loaf.

Ingredients

  • Large fresh cob loaf
  • 1 tbsp olive oil
  • 1/2 bunch spring onion, chopped small
  • 500g shortcut bacon rashers, diced
  • 2 tbsp chopped chives
  • 500g Philadelphia block cream cheese at room temperature
  • 250ml dollop cream
  • 300ml  sour cream (garlic and chives recommended)
  • 2 1/2 cups 4 cheese melt cheese
  • 1 French stick or bread of your choice thickly sliced

Instructions

  1. Preheat the oven to 180c fan forced, and line a tray with baking paper.
  2. Cut about 4-5cm off the top of the cob loaf (cutting a lid) leave about a 2cm gap from the sides. Put the lid to the side.
  3. Begin pulling out the inside of the cob. Be careful not to tear any of the walls of the loaf, set all insides aside.
  4. In a non-stick pan add in the olive oil and fry off the bacon and spring onion until nice and golden. Add in chives and cream cheese and stir until well combined.
  5. Add in sour cream, cream, cheese and season with a little salt and pepper stir until combined.
  6. Slowly pour the mixture into the cob loaf making sure the mix is well spread throughout the inside of the loaf.
  7. Place the lid back onto the cob loaf and arrange the other sliced bread pieces around the loaf. Place in the oven and cook for about 20-30 minutes, or until lightly toasted.
  8. Remove from the oven and remove the lid from the cob. Arrange inside of cob loaf pieces on a plate. Sprinkle the remaining chives on top of the cob loaf and serve.
  9. Enjoy!
