Orange Poppy Seed Cake

Perfect for an afternoon tea!

This is a classic, something you would have enjoyed at grandmas house. And if you loved that cake then you will enjoy this!

Ingredients

Cake

  • 1 1/2 cups self raising flour
  • 1/3 cup almond meal
  • 1/4 cup poppy seeds
  • 185g butter
  • 2/3 cup caster sugar
  • 1/4 cup orange jam
  • 2-3 tsp finely grated orange rind
  • 1/3 cup orange juice
  • 3 eggs

Icing

  • 100g butter
  • 100g cream cheese
  • 1 cup icing sugar (sifted)
  • 1-2 tsp vanilla essence

Instructions

Cake

  • Preheat the oven to 180c and line a 20cm round cake tin with baking paper.
  • Sift the flour into a large bowl and add the almond meal and poppy seeds, make a hole in the centre.
  • In a small pot over a low heat melt the butter, sugar, jam, orange rind and juice. Once melted pour into the hole and whisk together until smooth, add in the eggs and whisk again until combined.
  • Pour the mixture into the cake tin. Bake for 50-60 minutes. (or until a skewer comes out clean)
  • Remove from the oven and allow to cool in the tin for 15-20 minutes, then flip out onto a wire rack.

Icing

  • Beat the butter and cream cheese until smooth. Add in the icing sugar and vanilla essence and beat again until thick and smooth.
  • When the cake has completely cooled spread the icing evenly over the top.
  • Serve and enjoy!
