Cashew Chicken

Cashew Chicken is a delicious Chinese takeout dish, and Now you can make it at home!

This dish is easier than you might think. Making takeout food seems like a lot of work, but this recipe is so easy it will soon become a staple on the menu!

Note: Choose fried rice or noodles to go with this dish, add as much or as little veggies as you like, and if you want extra sauce double the sauce ingredients!

Ingredients

Chicken

  • 500g / chicken thigh or breast, skinless boneless, cut into 2.5cm
  • 1 1/2 tsp baking soda (bi-carb)

Sauce

  • 1 tbsp cornstarch or cornflour
  • 3 tbsp soy sauce (if you use light soy it could be more salty. adjust to taste)
  • 1 1/2 tbsp Chinese cooking wine or Mirin 
  • 1 1/2-3 tbsp oyster sauce (adjust how much you add according to how salty you like it)
  • 2 tsp sesame oil
  • Dash of white or black pepper

Stir Fry

  • 2 tbsp peanut oil (or vegetable oil)
  • 2 garlic cloves , minced
  • 1/2 brown onion , chopped into 1.75 cm pieces
  • 1 green capsicum chopped into 2 cm pieces
  • 1/2 cup broccoli chopped to personal preference
  • 1/2 cup carrots, coin cut
  • 6 tbsp water
  • 3/4 cup unsalted roasted cashews

Instructions

Before starting be sure to begin cooking your rice or noodles at the correct time so it all comes together.

Velveting your chicken

  1. Cut up chicken and toss with baking soda until well combine
  2. Marinate for 20 minutes
  3. Rinse well under running water, pat with paper towel to remove excess water
  4. Set aside

Sauce: Mix cornflour and soy sauce until there’s no lumps. Then add remaining Sauce ingredients and mix.

Marinate: in a seperate bowl place the chicken, 2 tbsp Sauce, mix to coat. Set aside for 10 minutes or more.

Cooking

  1. Heat oil over high heat in a wok or fry pan. Add the garlic and onion, cook for about 1 minute.
  2. Add chicken and cook for 2 minutes. Add capsicum and cook for 1 minute.
  3. Add Sauce and water. Bring to simmer and cook, stirring, for 1 minute or until sauce thickens and capsicum is tender.
  4. Stir through cashews, remove from the stove, and serve immediately with rice, cauliflower rice, noodles, or your preferred choice.
  5. Enjoy!
