Chocolate Banana Bread

Serve Fresh out of the oven with a scoop of vanilla ice cream…

Feel like the recipe is too plain? swap out half of the chocolate chips for white chocolate chips or dried cranberries!

Ingredients

  • 1 cup plain flour
  • 1/2 cup cocoa (Dutch process is reccomended)
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 3 large brown bananas (1 ½ cups mashed)
  • 1/4 cup unsalted butter (melted)
  • 1/4 cup melted coconut oil
  • 3/4 cup  packed light brown sugar
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract
  • 1 cup dark chocolate chips

Instructions

  1. Preheat oven to 180°C Grease a loaf pan with nonstick spray. Line with baking paper and set aside.
  2. Mash bananas in a large bowl. Mix in melted butter and oil to combine. Whisk in the egg, vanilla and brown sugar until smooth.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt and cocoa powder. Stir into the wet ingredients until just combined. mix in3/4 cup of the chocolate chips.
  4. Pour batter into prepared pan and top with remaining chocolate chips. Bake for 50-55 minutes, or until a toothpick inserted into the centre of the bread comes out mostly clean.
  5. Let cool in pan for 10 to 15 minutes, then remove cake and place onto a wire rack to cool.
  6. Serve and Enjoy!
