Herb And Garlic Crusted Lamb Roast

This Lamb leg roast has a delicious herb crust and is juicy on the inside. Add your favourite sides for a full meal!

Note: We recommend using fresh herbs but you can use dried if that’s all you have.

Ingredients

  • Lamb Leg Roast (Around 2.5kg)
  • 1 tbsp minced garlic
  • 2 tbsp freshly chopped rosemary
  • 1 tbsp freshly chopped oregano
  • 1 tbsp freshly chopped thyme
  • 1 tbsp ground salt
  • 1 tbsp freshly ground pepper

Instructions

  1. Preheat oven to 175c and prepare a roasting tray with a metal rack that sits slightly off the bottom of the tray
  2. Mix all ingredients except lamb, together in a small bowl.
  3. Very lightly score the fat on the top of the roast. (if your roast has no fat skip this step)
  4. Coat the entire roast in the mixture and make sure to rub it in.
  5. Cook the roast for 1 hour 30 minutes for the last 20 minutes raise the temperature to 200c.(check the temperature with a thermometer) Rare 60c, Medium rare 65c, Medium well done 70c and Well done 75c.
  6. Rest for 15 minutes. Serve with your favourite vegetables and sides.
  7. Enjoy!
