Simple Roast Leg of Lamb

5 ingredients and you have an incredible roast!

Want to make this a whole meal? Add your preferred veggies for roasting into roasting dish before popping it into the oven.

Ingredients

  • 2kg leg of lamb
  • 2 Cloves of garlic (cut into slim slivers)
  • 2 Tbsp fresh rosemary (stems removed)
  • 2 Tsp olive oil
  • Salt and pepper

Instructions

  1. Preheat oven to 180c.
  2. Lightly score the lamb all over (small, Not deep cuts.) Push the garlic and rosemary into the cuts.
  3. Brush the lamb all over with oil and generously salt and pepper.
  4. Place the lamb on a rack in a baking dish. and add 1/2 cup of water to the dish.
  5. Cook for 1 1/2 hours (a meat thermometer should read medium rare.) or cook for 1 3/4 hours for well done. In between cooking baste the roast with the juices in the bottom of the dish.
  6. Remove from the oven and allow it to sit for 10-15 minutes.
  7. Cut up, serve and Enjoy!
