An old favourite with a slight twist! Either as gifts for family and friends or to serve on Christmas day, this slice is easy and delicious.
You can add or subtract any add-ins for this recipe. If almonds are something you cant eat, swap them out for any nut or dried fruit of the same weight!
Ingredients
- 500g white chocolate (good quality cooking chocolate)
- 1 1/2 cups rice bubbles
- 50grams glace cherries red (halved)
- 50grams glace cherries green (halved)
- 80grams roasted slivered almonds
- 80grams roasted pistachios (shelled)
- 160grams mixed dried fruit
- 1 cup desiccated coconut
- 1 teaspoon vanilla extract
Instructions
- Line a 30cm x 20cm baking pan with baking paper.
- In a heat-proof bowl melt the chocolate using your preferred method. (Do not use a wooden spoon and be careful not to burn the chocolate)
- Once the chocolate is melted and nice and runny add the vanilla essence and stir until combine
- Fold in the remaining ingredients until well combined
- Put mixture into the prepared pan, and begin to press down with a large spatula.
- Refrigerate for 4 hours or until set.
- Once set let it sit for up to an hour before slicing (this will make it easier and neater to cut up)
