Jelly Slice

Super Easy and with only a few ingredients this slice is great for the whole family.

We use raspberry jelly for this recipe but you can use whatever flavor you like try mixing it up.

Ingredients

  • 85 g packet jelly crystals (Any Flavour)
  • 250 g Arnotts Marie biscuits
  • 175 g melted butter
  • (1/3 cup) water
  • 3 tsp gelatine
  • 395 g sweetened condensed milk (Not skim)
  • 1/3 cup lemon juice

Instructions

  1. Line a brownie tray with baking paper and set aside.
  2. Make jelly according to the packet instructions and put it aside to cool. (Do not place the jelly in the fridge)
  3. Crush the biscuits in a food processor/blender and put them into a separate bowl.
  4. Add the melted butter and mix until well combined.
  5. Press the mixture into the bottom of the lined tray (firmly, try to have no gaps) and then put it into the fridge.
  6. Sprinkle the gelatine powder over 1/3 cup cool water in a small bowl, allow to sit for about 2 minutes then stir. Place the small bowl into a larger bowl filled with boiling water (don’t let the boiling water into the gelatine bowl) stir until completely dissolved. 
  7. Add the condensed milk and lemon juice into a separate bowl. Add the dissolved gelatine mixture and mix until completely combined.
  8. Pour the mixture over the biscuit base and place into the fridge until set.
  9. Gently pour the jelly over the top of the slice and place it into the fridge until set.
  10. Cut into slices and Enjoy!
