Upside-Down Nectarine Cake

Have Nectarines that need to be used? Try this delicious yet simple recipe!

Pair this cake with fresh whipped cream or even plain vanilla ice cream if its fresh out of the oven!

Ingredients

  • 2 cups plain flour
  • 1 cup caster sugar
  • 1tsp baking soda
  • 1/2tsp salt
  • 1 cup buttermilk
  • 113g unsalted butter (melted)
  • 2 large eggs
  • 110g brown sugar
  • 4 large ripe nectarines (cut into 4cm thick wedges)

Instructions

  1. Preheat your oven to 177c. Line a 22cm cake pan with baking paper, spread 4 tablespoons of melted butter over the base and sides and sprinkle the brown sugar evenly over the base.
  2. On top of the brown sugar arrange slices of nectarine in an even single layer slightly overlapping the edges of each nectarine slice.
  3. In a mixing bowl, sift and then combine flour, sugar, baking soda and salt.
  4. In a separate bowl, whisk together buttermilk, remaining butter and eggs.
  5. Make a well in the center of the dry ingredients and pour the wet mixture in, mix until just combine. (try not to over mix)
  6. Pour the batter gently and evenly over the nectarines, then smoothing out the top of the mix. Be careful to not move the mix around to much as it will move the nectarines around as well.
  7. Place into oven on the middle rack, bake for 40-45 minutes, or until a skewer or knife is inserted and the center comes out clean. Remove from the oven and allow the cake to cool for 5-10 minutes.
  8. Place your desired serving dish or plate upside down on top of the cake. using oven mits or a tea towel (the tin will still be very hot). grabbing both the cake tin and serving dish flip the two so the serving dish is now the correct way up and the cake tin is upside down. Gently remove the the baking paper from the top and sides.
  9. Slice and serve straight away.
