Fluffy Blueberry Pancakes

Topped with extra blueberries and maple syrup…

These pancakes are perfect for a relaxed weekend morning. If you wanted to add something a little extra throw in some white or dark chocolate chips for an even more decadent treat.

Ingredients

  • 200g self-raising flour
  • 1 tsp baking powder
  • Pinch of salt
  • 1 egg
  • 1 1/2 tbsp salted butter (Melted)
  • 300ml buttermilk
  • 150g blueberries
  • Extra butter for cooking
  • 100% Canadian Maple syrup

Instructions

  1. In a large bowl Mix the flour, baking powder and salt.
  2. In a seperate bowl beat the egg and buttermilk together until well combined. Make a well in the dry ingredients and add the wet mix. Whisk to form a smooth thick batter.
  3. Add in the butter and mix. Then add half of the blueberries and gently stir.
  4. In a large non-stick frying pan add about a tablespoon of butter. Once melted drop large tablespoon sizes of batter in the pan or the size of the pancakes you would like.
  5. When batter begins to bubble (about 3 minutes) flip over the pancake and cook for 2-3 minutes or until a lovely golden brown.
  6. Continue to repeat this process until all batter is used
  7. Serve with the extra blueberries and maple syrup!
  8. Enjoy!
