Slow Cooked Lamb Shanks

Don’t have a slow cooker ? These lamb shanks are done in the oven!

Tasty on their own, but we recommend adding mashed potato as a side to soak up all the sauce from the shanks.

Ingredients

  • 2 medium size lamb shanks
  • 1 can of cherry tomatoes (whole)
  • 1/2 cup Pasata
  • 4 garlic cloves crushed
  • 4 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 2 tsp salt
  • 1 tsp fresh ground peper
  • 1 small brown onion (finely diced)
  • 2 Tbsp white balsamic vinegar
  • 2 Tbsp olive oil
  • 1 cup of water

Instructions

  1. Preheat oven to 170c
  2. Heat the olive oil in a skillet or non stick saucepan over a medium-high heat.
  3. When oil is hot sear lamb shanks until all side are golden brown.
  4. Reduce heat and add in brown onion and garlic until onions become translucent.
  5. Add all other ingredients.
  6. With the skillet or if your pan is not able to go into the oven pour everything into that pot or dish that can.
  7. Place a sheet of baking over the top of pot and place the lid on top.
  8. Place in the oven and cook for 2 hours 30 minutes.
  9. remove from the oven and serve.
  10. Enjoy!
