The perfect lamb roast.
This Lamb leg roast has a delicious herb crust and is juicy on the inside. Add your favourite sides for a full meal!
Ingredients
- Lamb Leg Roast
- 1 tbsp minced garlic
- 1 tbsp freshly chopped rosemary
- 1 tbsp oregano
- 1 tbsp dijion mustard
- 2 tbsp olive oil
- 2 tsp lemon juice
- 1 tbsp ground salt
- 1 tbsp freshly ground peper
Instructions
- Preheat oven to 175c and prepare a roasting tray with a metal rack that sits slightly off the bottom of the tray
- Mix all ingredients except lamb, together in a small bowl.
- Very lightly score the fat on the top of the roast. (if your roast has no fat skip this step)
- Coat the entire roast in the mixture and make sure to rub it in.
- Cook the roast for 1 hour 30 minutes for the last 20 minutes raise the temperature to 200c.(check the temperature with a thermometer) Rare 60c, Medium rare 65c, Medium well done 70c and Well done 75c.
- Rest for 15 minutes. Serve with your favourite vegetables and sides.
