White Chocolate Macadamia Nut Cookies

These white chocolate macadamia nut cookies will be a new big hit. Not only will the plate be cleared before you know it, but you will probably be asked for the recipe!

Who doesn’t love a good white chocolate macadamia nut cookie…? we do! These cookies are delicious and perfect for any time of year. Make them for birthdays, dinner parties, and even Christmas.

Ingredients

  • 1/2 cup of butter
  • 1/2 cup of shortening
  • 3/4 cup light brown sugar
  • 1/2 cup castor sugar
  • 2 large eggs
  • 1/2 Tsp vanilla extract
  • 1/4 Tsp almond extract (this is optional)
  • 2 1/2 cups plain flour
  • 1 Tsp baking soda
  • 1/2 Tsp salt
  • 1 cup coarsely chopped macadamia nuts
  • 1 cup coarsely chopped white cooking chocolate or white chocolate chips

Method

  1. Preheat the oven to 175c fan-forced.
  2. In a large bowl, cream together the butter, brown sugar, and white sugar until smooth.
  3. Beat in the eggs, one at a time, then stir in the vanilla and almond extracts.
  4. In a separate bowl combine the flour, baking soda, and salt.
  5. Gradually stir the dry mix into the creamed mixture
  6. Mix in the macadamia nuts and white chocolate.
  7. line a tray with baking paper and drop dough by teaspoonfuls onto the tray.
  8. Place in the fridge for 10-15 min before baking.
  9. Bake for 10min or until the edges go golden brown.
  10. Remove and allow to cool and firm up before serving.
