Make cob loafs but find people miss out? Try our mini cob loaf recipe, guaranteed that everyone will get at least one cob loaf.
Ingredients
- 250g bacon diced
- 1 cup spring onion finely chopped
- 250g cream cheese (room temperature)
- 1 1/2 (350ml) cups cream
- 2 cups mozzarella grated
- 1 cup tasty or 3 cheese mix (grated)
- 24 dinner rolls
Instructions
- Preheat the oven to 180c.
- Cut a small circle top off the dinner rolls and pull the soft bread out, placing the tops and stuffing aside.
- In a fry pan fry onion and bacon, and place in a bowl.
- Add the block of softened cheese, cream and grated cheese. Mix well and fill each of the dinner rolls.(leave a small gap between the filling and the top incase it overflows)
- Place bread lids on the rolls and place them on a baking tray. cover the tray with alfoil and bake for 15 minutes. Remove from the alfoil and bake for another 10 minutes or until golden. Remove from the oven and set aside.
- Place the bread pieces on a separate baking tray, and bake for 7-10 minutes to crisp up.
- Remove from the oven and place on a heat-resistant surface with the rolls for people to help themselves or serve up individually on a plate.
