Avacado Brownies

Got some avocados to use up? Give this avocado brownie recipe a go!

Ingredients

  • 1 1/4 cups + 2 tablespoons almond flour
  • 3/4 cup dutch cocoa powder
  • 1/4 tsp salt
  • 1/4 cup avocado mashed
  • 6 tbsp coconut oil melted
  • 1 1/2 cups white castor sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1/2 cup roughly chopped walnuts
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 180C. Line a 20cm x 20cm square pan with baking paper.
  2. Add almond flour, cocoa powder, and salt in a bowl, and mix well.
  3. In a separate bowl whisk together the avocado, coconut oil, sugar, and vanilla extract then add the eggs in, one at a time, and mix well.
  4. pour in the dry ingredients and mix until just combined. Fold through the chocolate chips and walnuts.
  5. Pour the mix into the pan and bake for 22-25 minutes.
  6. Remove the brownies from the oven and let them cool in the pan completely. (you can cool them in the fridge quicker).
  7. Cut up and enjoy!
