Gluten-Free Air Fryer Fried Chicken

Ingredients

  • 1kg Chicken drumsticks
Marinade
  • 250ml buttermilk
  • 1 tbsp salt
Batter
  • 2 eggs
  • 2 cups gluten-free plain flour
  • 2 tsp salt
  • 1 tsp onion powder
  • 1 1/2 tsp garlic powder
  • 1 tsp sweet paprika
  • 1/2 tsp celery salt
  • 1 tbsp black pepper
  • 1/2 tsp cayenne pepper
  • 1/2 tsp ginger powder
  • 1 tsp dried thyme
  • 1/2 tsp mustard powder
  • 1 tsp dried oregano

Instructions

  1. Mix the marinade ingredients together and toss the chicken so it’s well coated.
  2. Pour into a large zip lock bag and refrigerate for 24 hours turning the bag over every 2-3 hours if possible.
  3. In a small bowl beat the eggs until well mixed. In a large bowl add in all other batter ingredients and mix together.
  4. Place a sheet of baking paper underneath an oven safe cooling rack. And line the bottom of the air fryer with baking paper. (poke holes in the baking paper if you need air flow)
  5. Preheat your air fryer to 200c.
  6. Coat each drumstick in the flour mixture, then the eggs, and then the flour mixture once again. Place the coated drumstick on the cooling rack and repeat with remaining chicken.
  7. Lay chicken in a single layer in the Air Fryer so the pieces aren’t touching.
  8. Air Fry for 13 minutes. Flip over. If there are any dry spots where the flour is showing, spritz with olive oil.
  9. Fry for another 13 minutes. Check that the internal temperature is 165° If not then cook for 5 minutes at a time until done.
  10. Serve and Enjoy!
