With a tasty herb crust, this recipe is sure to be a staple.
Add your favourite roast veggies as a side to our fantastic lamb leg roast! Succulent and flavourful there is no doubt everyone will enjoy this recipe.
Ingredients
2-3kg Lamb leg (bone-in)
Herb Mix
- 2 Tbsp Lemon Juice (fresh)
- 2 Tbsp Fresh chopped rosemary
- 2 Tbsp Fresh chopped thyme
- 2 Tbsp Olive oil
- 4-6 Garlic cloves (freshly minced)
- 4 tsp fresh ground pepper
- 1 Tbsp salt
- 2 Tbsp Dijion mustard
Instructions
- Preheat oven to 170c and set up a roasting tray with a wire rack inside, big enough for the roast to sit on.
- Mix all Herb mix ingredients together well and set aside.
- With a paper towel gently pat the lamb dry. On the top side of the lamb (fat side up) gently score the lamb.
- Rub the herb mix all over the roast and massage it in. place the lamb on the rack fat side up.
- Place into oven and cook for 1 hour 30 minutes – 1 hour 45 minutes or until it reaches an internal temperature of 58c.
- Remove from oven and allow the roast to rest for 15-20 minutes before slicing and serving.
