Herb, Lemon And Dijon Lamb Leg Roast

With a tasty herb crust, this recipe is sure to be a staple.

Add your favourite roast veggies as a side to our fantastic lamb leg roast! Succulent and flavourful there is no doubt everyone will enjoy this recipe.

Ingredients

2-3kg Lamb leg (bone-in)

Herb Mix

  • 2 Tbsp Lemon Juice (fresh)
  • 2 Tbsp Fresh chopped rosemary
  • 2 Tbsp Fresh chopped thyme
  • 2 Tbsp Olive oil
  • 4-6 Garlic cloves (freshly minced)
  • 4 tsp fresh ground pepper
  • 1 Tbsp salt
  • 2 Tbsp Dijion mustard

Instructions

  1. Preheat oven to 170c and set up a roasting tray with a wire rack inside, big enough for the roast to sit on.
  2. Mix all Herb mix ingredients together well and set aside.
  3. With a paper towel gently pat the lamb dry. On the top side of the lamb (fat side up) gently score the lamb.
  4. Rub the herb mix all over the roast and massage it in. place the lamb on the rack fat side up.
  5. Place into oven and cook for 1 hour 30 minutes – 1 hour 45 minutes or until it reaches an internal temperature of 58c.
  6. Remove from oven and allow the roast to rest for 15-20 minutes before slicing and serving.
  7. Enjoy!
