Gluten-Free Plum Cobbler

With sweet plums and a beautiful spice aroma, this cobbler is sure to hit the spot!

This dish is paired with vanilla ice cream, but feel free to give that a miss and whipped up some cream instead.

Ingredients

Filling

  • 7 cups (about 7-9 large plums) ripe plums (pitted and sliced)
  • 1/3 cup coconut sugar
  • 1 tsp vanilla essence
  • 1/2 Granny Smith apple (peeled and grated)
  • 3 tbsp cornstarch
  • 1 tsp ground cinnamon

Topping

  • 1 cup plain gluten-free flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/3 coconut sugar
  • 8 tbsp unsalted butter (cold)
  • 2/3 cup heavy whipping cream
  • 2 tbsp coconut sugar for topping
  • Vanilla ice cream

Instructions

  1. Preheat oven to 190c. In a large bowl mix all filling ingredients together.
  2. Spoon the mixture into a baking dish big enough that the cobbler won’t bubble over.
  3. In a separate bowl mix flour, baking powder, salt and coconut sugar. Cut the butter into small pieces. Add it to the bowl and use a fork to mash the butter into the flour, until you achieve a crumbly consistency.
  4. Add the cream into the crumble and stir with the fork just until moist. Gently press the mixture together using a spatula, making a loose dough.
  5. With your hands crumble the dough over the plum mixture. Sprinkle with 2 tablespoons of coconut sugar.
  6. Place into the oven and bake until the top is golden brown and the filling is bubbling (35-45 minutes.) 
  7. Serve warm and top with Vanilla ice cream.
