With sweet plums and a beautiful spice aroma, this cobbler is sure to hit the spot!
This dish is paired with vanilla ice cream, but feel free to give that a miss and whipped up some cream instead.
Ingredients
Filling
- 7 cups (about 7-9 large plums) ripe plums (pitted and sliced)
- 1/3 cup coconut sugar
- 1 tsp vanilla essence
- 1/2 Granny Smith apple (peeled and grated)
- 3 tbsp cornstarch
- 1 tsp ground cinnamon
Topping
- 1 cup plain gluten-free flour
- 1 1/2 tsp baking powder
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 1/3 coconut sugar
- 8 tbsp unsalted butter (cold)
- 2/3 cup heavy whipping cream
- 2 tbsp coconut sugar for topping
- Vanilla ice cream
Instructions
- Preheat oven to 190c. In a large bowl mix all filling ingredients together.
- Spoon the mixture into a baking dish big enough that the cobbler won’t bubble over.
- In a separate bowl mix flour, baking powder, salt and coconut sugar. Cut the butter into small pieces. Add it to the bowl and use a fork to mash the butter into the flour, until you achieve a crumbly consistency.
- Add the cream into the crumble and stir with the fork just until moist. Gently press the mixture together using a spatula, making a loose dough.
- With your hands crumble the dough over the plum mixture. Sprinkle with 2 tablespoons of coconut sugar.
- Place into the oven and bake until the top is golden brown and the filling is bubbling (35-45 minutes.)
- Serve warm and top with Vanilla ice cream.
