Ingredients

  • Your Choice of Turkish rolls cut in half
  • Butter
  • Spinach
  • 2 eggs
  • 4 rashers of bacon
  • Your choice of hollandaise sauce to top
  • Salt and pepper to Taste
  • 1 1/2 tbsp vinegar, optional

Instructions

  1. In a pot fill it water but leave a small gap between the top and the water, bring the water to a boil. Then reduce the heat to low.
  2. Heat a non stick pan over a medium heat and begin to cook the bacon.
  3. Stir the vinegar into the water and create a vortex. Add the eggs to the middle of the vortex and cook the egg for 3 minutes.
  4. Toast your peices of turkish bread in the toaster to your liking. If you have time before the eggs are cooked, butter the toast.
  5. Remove the eggs with a slotted spoon and allow it to drain to remove any excess water.
  6. Place the eggs on a small plate or bowl.
  7. On a large plate lay the toast cut side up and layer first with the bacon rashers, then top with a small handful of spinach for each slice, gently add your eggs to the top centre as best you can. Very lightly crack a small amount of salt and peper over the eggs and spinch, top with your desired amount of hollinasie sauce and finally crack your desired amount of salt and peper on top. (you do not need a lot)
  8. Serve and Enjoy!
