Topped with extra blueberries and maple syrup…
These pancakes are perfect for a relaxed weekend morning. If you wanted to add something a little extra throw in some white or dark chocolate chips for an even more decadent treat.
Ingredients
- 200g self-raising flour
- 1 tsp baking powder
- Pinch of salt
- 1 egg
- 1 1/2 tbsp salted butter (Melted)
- 300ml buttermilk
- 150g blueberries
- Extra butter for cooking
- 100% Canadian Maple syrup
Instructions
- In a large bowl Mix the flour, baking powder and salt.
- In a seperate bowl beat the egg and buttermilk together until well combined. Make a well in the dry ingredients and add the wet mix. Whisk to form a smooth thick batter.
- Add in the butter and mix. Then add half of the blueberries and gently stir.
- In a large non-stick frying pan add about a tablespoon of butter. Once melted drop large tablespoon sizes of batter in the pan or the size of the pancakes you would like.
- When batter begins to bubble (about 3 minutes) flip over the pancake and cook for 2-3 minutes or until a lovely golden brown.
- Continue to repeat this process until all batter is used
- Serve with the extra blueberries and maple syrup!
