Creamy Sundried Tomato & Prosciutto Gnocchi With Garlic Bread And Red Wine.

This Recipe is for any special occasion. Paired with delicious Garlic bread and a glass of red wine this meal will impress your partner or guests.

We have added a garlic bread recipe, but you can buy store brought if you prefer. We recommend pairing this with a red wine of your choice for those special occasions.

Ingredients

  • 2 tbsp of olive oil
  • 1 shallot finely chopped
  • 4 cloves garlic, minced
  • 500 g dry packaged gnocchi
  • 1/2 cup sun-dried tomato strips in oil
  • 2 tsp sun-dried tomato
  • 4 slices of prosciutto, cut into thin strips
  • 1/3 cup chicken stock
  • 1 tsp dried Italian herbs
  • 300ml double thick cream
  • 1 1/2 cups fresh baby spinach
  • 1/2 cup fresh grated parmesan cheese(it’s important that this is fresh)
  • 3 tbsp fresh chopped basil

Optional: The best garlic bread

  • 1 white french stick
  • 125 grams of room temperature butter
  • 1/2 tsp salt
  • 1/2 tsp fresh chopped parsley
  • 1/2 tsp fresh chopped oregano
  • 2- 3 cloves of fresh crushed garlic (add more for more garlic flavour)

Instructions: The best garlic bread

  1. Preheat the oven to 200c fan forced
  2. In a bowl mix together butter, salt, parsley, oregano, and garlic until it’s well combined.
  3. Slice the french stick every 2 cm apart, cutting almost all the way through.
  4. Spread a generous amount of Garlic butter in every slice. With the leftover, spread it over the top of the bread.
  5. Wrap the bread in alfoil and place in the oven for 15-20 minutes keep checking to achieve the desired amount of goldenness.
  6. Enjoy!

Instructions

  1. In a large non-stick pan over medium-high heat add olive oil and shallots cook until the shallots go clear. Add the garlic and sauté for about 1 minute.
  2. Add the gnocchi, sun-dried tomatoes, sun-dried tomato oil, and prosciutto cook until the gnocchi goes a little golden.
  3. Add in the Italian herbs, chicken stock, and cream. reduced heat to medium and allow to cook for 6-7 minutes covered.
  4. Bring to a simmer and add in spinach cook until wilted, then add parmesan and basil stir for 1-2 minutes or until gnocchi is soft.
  5. Turn heat off and continue to stir until the sauce begins to thicken. Then serve.
  6. Pair this meal with a glass of your preferred red wine
  7. Enjoy!
