Serve Fresh out of the oven with a scoop of vanilla ice cream…
Feel like the recipe is too plain? swap out half of the chocolate chips for white chocolate chips or dried cranberries!
Ingredients
- 1 cup plain flour
- 1/2 cup cocoa (Dutch process is reccomended)
- 1 teaspoon baking soda
- 1/2 teaspoon sea salt
- 3 large brown bananas (1 ½ cups mashed)
- 1/4 cup unsalted butter (melted)
- 1/4 cup melted coconut oil
- 3/4 cup packed light brown sugar
- 1 large egg (room temperature)
- 1 tsp vanilla extract
- 1 cup dark chocolate chips
Instructions
- Preheat oven to 180°C Grease a loaf pan with nonstick spray. Line with baking paper and set aside.
- Mash bananas in a large bowl. Mix in melted butter and oil to combine. Whisk in the egg, vanilla and brown sugar until smooth.
- In another bowl, whisk together flour, baking powder, baking soda, salt and cocoa powder. Stir into the wet ingredients until just combined. mix in3/4 cup of the chocolate chips.
- Pour batter into prepared pan and top with remaining chocolate chips. Bake for 50-55 minutes, or until a toothpick inserted into the centre of the bread comes out mostly clean.
- Let cool in pan for 10 to 15 minutes, then remove cake and place onto a wire rack to cool.
