Cauliflower Fritters

A perfect addition to breakfast instead of hash browns!

If you want to make this more dietary friendly swap out the 1/2 cup of flour for 1/3 cup almond flour!

Ingredients

  • 5 cups chopped cauliflower florets
  • 2 eggs
  • 1 cloves garlic crushed
  • 1 tbsp fresh chopped parsley
  • ½ cup all purpose flour
  • ½ tsp baking powder
  • salt and pepper to taste
  • vegetable oil for frying

Instructions

  • Blend the cauliflower in a food processor and process until finely minced.
  • Transfer the cauliflower into a large mixing bowl and add the rest of the ingredients (except the vegetable oil). Mix everything until it becomes a paste-like mixture. If the mixture looks a little too soft and moist, add some more flour.
  • Using a soup spoon or an ice cream scoop as a measure, make small 1cm thick patties. You can make them smaller or larger depending on your personal preference.
  • Heat small amount of oil over a medium heat and cook for about 2 minutes per side.
