Do you have some extra choc honeycomb left over? Try our choc honeycomb muffins!
Ingredients
- 2 cups plain flour
- 1 tsp baking soda
- 1/2 cup caster sugar
- 1 cup dark chocolate chips
- 100g choc honeycomb (roughly chopped)
- 1 egg lightly beaten
- 70g butter melted
- 1 cup buttermilk
- 1 tsp vanilla essence
Instructions
- Preheat the oven to 175c.
- With muffin liners line the 12-hole muffin tin.
- Sift flour and baking soda into a bowl, add the sugar and stir.
- Add in chocolate chips, honeycomb, egg, melted butter, buttermilk and vanilla essence mix until just combined.
- Spread the batter evenly into the muffin tin. Bake for 20 minutes until golden or a skewer inserted into the centre comes out clean.
- Allow the muffins to cool for 5 minutes.
- Transfer to a wire rack to cool.
