The Best Raw Chocolate Mousse

Dairy Free, Gluten Free, Egg Free and suuppeerr creamy!

This recipe is simple and easy to make. You can top this with fresh berries, cocoa nibs or your preferred topping. Love ice-cream more than mousse ? Pour this into your preferred container and freeze for a creamy chocolate ice-cream!

Ingredients

  • 150 grams raw unsalted cashews
  • 350 grams ice cubes
  • 1 large ripe avocado (flesh only, seed and skin removed)
  • 40 grams raw cacao powder
  • 90 grams raw pitted dates
  • 1 tsp vanilla bean extract

Instructions

  1. Soak the cashews in water for at least 30 minutes, then drain the cashews.
  2. In a food processor or blender add in the cashews and ice then blend for 30 seconds on a medium speed.
  3. Scrape down the blender and add in the remaining ingredients.
  4. Blend and scrape down, until the mixture becomes smooth and creamy.
  5. Spoon into desert bowls and serve
  6. Enjoy!
