This salad is so good people will be asking you for the recipe!
This a family recipe passed down through generations in my family, and I’m here today to share it with you!
Ingredients
- 1kg of blue potatoes washed
- 1 x 440gram jar of mayonnaise ( we recommend S&W whole real egg mayonnaise, you can add more mayo if you prefer.)
- 300 grams bacon (streaky or middle bacon is recommended)
- 1/2 bunch spring onions
- 1/2 tbsp oil
- 5 eggs
- 1 tsp salt
Instructions
- Cut the potatoes into 5 x 5cm cubes and pop them into a pot with the salt.
- Fill the pot with water, just enough to cover the potatoes, and put it on the stove over high heat.
- Bring to a boil, then turn the heat down and simmer for about 6-8 minutes. Or until the potatoes are soft but still hold their form.
- Drain and allow to sit aside and cool.
- Add the egg into a pot and fill it with water. Bring to a boil, then simmer for 6-8 minutes.
- Remove from heat and drain boiling water. Rinse with cool water until the eggs and pot are have cooled down.
- Start peeling the eggs(it may be easier to peel under running water).
- Cut eggs into quarters and set them aside.
- Dice bacon and spring onions finely. (use all of the spring onion)Heat a large pan over medium-high heat with oil and add in bacon and spring onions.
- Continue cooking until bacon starts to become a little golden.
- In a large bowl, add potatoes, bacon, spring onions, eggs, and mayonnaise, and gently mix all of your ingredients.
- Scoop salad into your serving bowl.
- Enjoy!
