Don’t have a slow cooker ? These lamb shanks are done in the oven!
Tasty on their own, but we recommend adding mashed potato as a side to soak up all the sauce from the shanks.
Ingredients
- 2 medium size lamb shanks
- 1 can of cherry tomatoes (whole)
- 1/2 cup Pasata
- 4 garlic cloves crushed
- 4 sprigs fresh rosemary
- 4 sprigs fresh thyme
- 2 tsp salt
- 1 tsp fresh ground peper
- 1 small brown onion (finely diced)
- 2 Tbsp white balsamic vinegar
- 2 Tbsp olive oil
- 1 cup of water
Instructions
- Preheat oven to 170c
- Heat the olive oil in a skillet or non stick saucepan over a medium-high heat.
- When oil is hot sear lamb shanks until all side are golden brown.
- Reduce heat and add in brown onion and garlic until onions become translucent.
- Add all other ingredients.
- With the skillet or if your pan is not able to go into the oven pour everything into that pot or dish that can.
- Place a sheet of baking over the top of pot and place the lid on top.
- Place in the oven and cook for 2 hours 30 minutes.
- remove from the oven and serve.
