Simple Creamy Herb Chicken

If you are needing something easy this recipe is for you.

This simple creamy herb chicken dish is great as you probably have all the ingredients in the pantry. You can add any sides you like, try rice, pasta or even steamed veggies, the sauce of this dish does all the hard work for you.

Ingredients

Chicken

  • 4 chicken breasts (pounded 1/2-inch thin)
  • 1 1/2 tsp baking soda
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1 teaspoon parsley (fresh & chopped)
  • 1/2 tsp basil
  • 1/2 tsp dried oregano
  • salt and pepper to taste

Sauce

  • 4 garlic cloves, minced
  • 1 tsp fresh chopped parsley
  • 1/2 tsp oregano
  • 1/2 tsp dried basil
  • 1 cup milk
  • Salt and black pepper, to taste
  • 1 tsp cornstarch
  • 1 tbsp water

Instructions

Chicken

  1. Cut up the chicken and toss with baking soda until well combined
  2. Marinate for 20 minutes.
  3. Rinse well under running water, pat with a paper towel to remove excess water.
  4. Set aside.

Dish

  1. Mix the rest of the chicken ingredients together.
  2. Coat chicken with the mix.
  3. Heat 1 tbsp of oil in a large pan over medium-high heat and cook chicken breasts for about 5 minutes on each side or until fully cooked.
  4. Transfer to a plate and set aside.
  5. In a separate dish mix cornstarch and water together until smooth and there are no lumps.
  6. In the same pan, heat 2 tsp of olive oil and sauté garlic, with parsley, basil, and oregano, until fragrant (about 1 minute).
  7. Stir in milk and season with salt and pepper, to taste.
  8. Bring to a boil and add the cornstarch mixture to the center of the pan, quickly stirring, until the sauce has thickened slightly. Reduce heat and simmer gently for a further minute to allow the sauce to thicken more.
  9. Return chicken to the pan. Sprinkle with extra herbs if desired
  10. Enjoy!
