Oven Roasted Sweet Potatoes

Ingredients

  • 2 sweet potatoes (small-medium Size)
  • 2 Tbsp Olive oil
  • 200ml Sour cream
  • 2 Tbsp Fresh chopped chives
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 220c and line a baking tray with baking paper.
  2. Wash and lightly scrub each sweet potato (just enough to remove any dirt but not to remove the skin). Dry each sweet potato with a paper towel and set aside to fully dry for 5-10 minutes.
  3. Using a fork poke holes in each sweet potato about 5-6 times, then cut each sweet potato in half lengthways.
  4. Coat the sweet potato halves in the olive oil and rub it in so each half is well coated, then lightly salt and pepper all over.
  5. Lay the sweet potatoes on the tray, skin side down and place in the oven to bake for 30 minutes.
  6. Remove from the oven and allow to sit for 5-10 minutes. With a spoon make a small hole in the centre of the sweet potatoes (be careful they will be very hot).
  7. Place a dollop of sour cream in each sweet potato half and sprinkle over the chopped chives.
  8. Serve and Enjoy!
