Koren Beef With Veggies

Note: We recommend serving this over a bed of coconut rice.

Ingredients

  • 500gm beef mince
  • 1/4 cup coconut aminos
  • 2 Tbsp sesame oil
  • 1 Tsp red chilli flakes
  • 1 Tbsp fresh ginger finely chopped or minced
  • 2 Tbsp coconut sugar
  • 2 Tbsp honey
  • 2 garlic cloves finely chopped
  • 1/2 red capsicum finely sliced
  • 1/2 green capsicum finely sliced
  • 1 spring onion (green part only, finely sliced)
  • 1 tbsp sesame seeds
  • 1 fresh red chilli finely sliced

Instructions

  1. In a small bowl whisk together the coconut aminos, 1 tbsp sesame oil, ginger, coconut sugar and honey.
  2. In a wok heat up the remaining sesame oil over medium-high heat, cook garlic until fragrant then add mince, and capsicum until all cooked through.
  3. Strain any excess water from the wok. Pour in the coconut aminos mixture and stir until all mixed together.
  4. Serve up in a bowl and sprinkle over your desired amount of spring onion, sesame seeds and chilli flakes.
  5. Enjoy!
