These lamb loin chops are simple, reasonably quick, and are so packed full of flavour you barely need anything else on the plate! Besides veggies of course…
You really don’t need starch on the plate with these chops, but if you are looking for an option mashed potato goes great as it will soak up all that incredible flavour.
Ingredients
- 8 lamb loin chops
Herb Mustard Paste
- 2 tbsp Dijon mustard
- 2 tbsp extra virgin olive oil
- 2 garlic cloves minced
- 2 tsp dried Herbes de Provence
- 1/4 tsp salt or more to taste
- Salt & pepper to taste
Instructions
- Preheat oven to 200c.
- Mix all paste ingredients together until well combined.
- Line a baking tray with baking paper and place chops with a gap between each one.
- Season chops both sides with salt and pepper.
- Spread an even amount of paste on each of the chops coat evenly (on top side only).
- Bake for about 15 min or until the internal temperature reads 57c.
- Remove from the oven and place foil over the chops and let rest for 5 min.
- Serve alone or with your choice of sides.
