Portuguese Chicken

Note: If you diced to double this recipe, the cooking remains the same. Just make sure the internal temperature of the chicken reads 75c on all pieces before you take it out to rest.

Ingredients

  • 5 Chicken pieces
  • 2 Tsp Lemon Peper
  • 2 Tsp Sweet paprika
  • 2 Tsp garlic powder
  • 1 Tsp salt
  • 2 Tbsp oil

Instructions

  1. In small bowl mix all the spices and salt together in a bowl until combine
  2. Generously coat the chicken pieces in the oil.
  3. Then in a seperate bowl sprinkle the seasoning over all the chicken pieces and massage the seasoning into the chicken until very well coated.
  4. Cover the bowl with a tea towel and allow to sit for 15-20 minutes to come up to room temperature.
  5. Preheat the oven to 200c.
  6. When the oven is hot place the chicken pieces into a baking tray (skin side up) and place in the oven.
  7. Cook for 30 minutes, then lower the temperature to 170c and cook for another 10-15 minutes. Before removing from the oven use a meat thermometer and check the internal temperature, when it reads 75c the chicken is cooked. Cook until the chicken reads this temperature.
  8. Remove from the oven and allow it to rest for 5-10 minutes.
  9. Serve and enjoy!
