Ham And Egg Breakfast Muffins

Got ham leftover, wondering what to have for breakfast? Then ham and egg breakfast muffins are for you!

These muffins are great because you can add pretty much whatever you like. Got some salami leftover, maybe spring onion? Chop it up and add it to the mix!

Ingredients

  • 90 grams ham
  • 1 tbsp olive oil
  • 1 1/2 cups plain flour
  • 3 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cheese (grated)
  • 2tbsp chives (finely chopped)
  • 80g butter (melted)
  • 2eggs (lightly whisked)
  • 2/3 cup milk

  1. Preheat oven to 200c.

  3. Sift flour, baking powder, and salt and pepper into a bowl and add cheese and chives and mix together.
  4. Whisk butter, egg, and milk in a separate jug and pour into dry ingredients. Stirring gently until almost combined.
  5. Spoon a small amount of mixture into each section of the muffin tin about 1/4 full.
  6. Crack a whole egg in each section, then season with salt and pepper and sprinkle a small amount of cheese then top off with a small amount of ham top with mixture just below the rim.
  7. Sprinkle some chopped ham, cheese, and chives on top.
  8. Bake for about 15 to 18 minutes or until golden on top and cooked throughout.
