Ingredients
- 6 plums (ripe or underripe)
- ¼ cup brown sugar
- 6 star anise
- ½ cup water
- pinch sea salt
- Your choice of vanilla ice cream (We recommend Connoisseur)
Instructions
- Pre-heat the oven to 200c.
- Cut each plum in half and carefully twist them apart, using a spoon carefully remove the stone and remove any stems.
- Gently chop and crush the star anise.
- In a large baking dish place, all of the plums cut side up and sprinkle the brown sugar and star anise over the plums.
- Carefully pour the water around the plums.
- Place in the oven for 15 minutes until the plums are soft and a syrup has collected in the bottom of the baking dish.
- Remove from the oven and set aside while you put one scoop of ice cream in each bowl.
- Add one to two plums per bowl, drizzle a small amount of the syrup from the baking dish over the plums. Sprinkle with a very small amount of salt and serve.
