Fragrant Roasted Plums With Creamy Vanilla Ice Cream

Ingredients

  • 6 plums (ripe or underripe)
  • ¼ cup brown sugar
  • 6 star anise
  • ½ cup water
  • pinch sea salt
  • Your choice of vanilla ice cream (We recommend Connoisseur)

Instructions

  1. Pre-heat the oven to 200c.
  2. Cut each plum in half and carefully twist them apart, using a spoon carefully remove the stone and remove any stems.
  3. Gently chop and crush the star anise.
  4. In a large baking dish place, all of the plums cut side up and sprinkle the brown sugar and star anise over the plums.
  5. Carefully pour the water around the plums.
  6. Place in the oven for 15 minutes until the plums are soft and a syrup has collected in the bottom of the baking dish.
  7. Remove from the oven and set aside while you put one scoop of ice cream in each bowl.
  8. Add one to two plums per bowl, drizzle a small amount of the syrup from the baking dish over the plums. Sprinkle with a very small amount of salt and serve.
  9. Enjoy!
