Choc Honeycomb Brownies

These brownies are something extra special, try adding your favourite nuts or chocolate.

Ingredients

  • 240grams unsalted butter, melted
  • 2 tablespoons vegetable oil
  • 3 large eggs, at room temperature
  • 1 tbsp vanilla extract
  • 3/4 teaspoon salt
  • 1 1/4 cups 260grams caster sugar
  • 1/2 tsp baking powder
  • 1 cup light brown sugar
  • 1 cup plain flour
  • 1 cup dutch cocoa powder
  • 1/2 cup white chocolate chips
  • 1/2 cup choc honeycomb, roughly chopped
  • 200grams roughly chopped chocolate or large chocolate chips milk or dark

Instructions

  • Preheat oven to 175c, and line a 20cmx 30cm baking tray with baking paper
  • Melt butter and white chocolate chips (be carful not to burn)
  • Combine the melted mixture, oil and sugars together in a bowl. Whisk and add the eggs and vanilla, beat until the mixture becomes lighter in colour.
  • Sift flour, cocoa powder salt and baking powder. Gently mix the dry and wet ingredients until just combined don’t over mix.
  • Fold in the remaining chocolate chips and chocolate honeycomb.
  • Pour batter into the baking tray.
  • Bake for 30-35 minutes.
  • Remove from oven and allow to sit for 15-20 minutes.
  • Be gentle when removing from tray and allow to full cool before cutting.
  • Enjoy!
