These brownies are something extra special, try adding your favourite nuts or chocolate.
Ingredients
- 240grams unsalted butter, melted
- 2 tablespoons vegetable oil
- 3 large eggs, at room temperature
- 1 tbsp vanilla extract
- 3/4 teaspoon salt
- 1 1/4 cups 260grams caster sugar
- 1/2 tsp baking powder
- 1 cup light brown sugar
- 1 cup plain flour
- 1 cup dutch cocoa powder
- 1/2 cup white chocolate chips
- 1/2 cup choc honeycomb, roughly chopped
- 200grams roughly chopped chocolate or large chocolate chips milk or dark
Instructions
- Preheat oven to 175c, and line a 20cmx 30cm baking tray with baking paper
- Melt butter and white chocolate chips (be carful not to burn)
- Combine the melted mixture, oil and sugars together in a bowl. Whisk and add the eggs and vanilla, beat until the mixture becomes lighter in colour.
- Sift flour, cocoa powder salt and baking powder. Gently mix the dry and wet ingredients until just combined don’t over mix.
- Fold in the remaining chocolate chips and chocolate honeycomb.
- Pour batter into the baking tray.
- Bake for 30-35 minutes.
- Remove from oven and allow to sit for 15-20 minutes.
- Be gentle when removing from tray and allow to full cool before cutting.
