Got some avocados to use up? Give this avocado brownie recipe a go!
Ingredients
- 1 1/4 cups + 2 tablespoons almond flour
- 3/4 cup dutch cocoa powder
- 1/4 tsp salt
- 1/4 cup avocado mashed
- 6 tbsp coconut oil melted
- 1 1/2 cups white castor sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1/2 cup roughly chopped walnuts
- 1 cup chocolate chips
Instructions
- Preheat the oven to 180C. Line a 20cm x 20cm square pan with baking paper.
- Add almond flour, cocoa powder, and salt in a bowl, and mix well.
- In a separate bowl whisk together the avocado, coconut oil, sugar, and vanilla extract then add the eggs in, one at a time, and mix well.
- pour in the dry ingredients and mix until just combined. Fold through the chocolate chips and walnuts.
- Pour the mix into the pan and bake for 22-25 minutes.
- Remove the brownies from the oven and let them cool in the pan completely. (you can cool them in the fridge quicker).
- Cut up and enjoy!
