This will show you how to cook a perfect pork roast every time!
We have given you the foundations of the perfect roast. you can add any rubs, herbs, or sauces you like, get creative, and let us know your favourite combination!
Ingredients
- 1 pork loin roast or Scotch fillet roast (roughly 500grams)
- 2 tbsp olive oil or butter
Instructions
- Preheat the oven to 180C.
- Heat oil or butter in a large cast-iron pan over high heat. Add pork and sear until golden all over.
- In the cast iron pan place in the oven, then cook for 15 – 20 minutes (or 45 minutes per kg for scotch fillet roast) or until the internal temperature is 68C (with a meat thermometer).
- Remove pork onto a plate and tent with foil and rest for 5 minutes.
- Cut pork into thick slices and serve.
