Tired of cooking chicken the same way? This recipe will teach you how to achieve the best roast chicken you’ve ever had.
Ingredients
- 4 chicken breasts or 6 chicken thighs skinless
- 4 tbsp salt
- 950ml warm water
- 1 tsp salt
- 1 tbsp olive oil
- 1/2 cup halved cherry tomatoes
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp dried rosemary
- 4 sprigs of fresh rosemary
Instructions
- Dissolve the 4 tbsp salt into the 950ml of warm water.
- Add the chicken and allow to brine for 1-3 hours.
- Preheat oven to 210c fan-forced.
- Mix the 1 tsp salt, black pepper, garlic powder, and dried rosemary in a separate dish.
- Remove the chicken from the brine mix and place them into a baking tray.
- Brush the chicken with olive oil on both sides and sprinkle the herb mixture over the chicken, add the sprigs of rosemary and cherry tomatoes around the chicken.
- Bake for 15-20 minutes or until the thickest internal part of the chicken reads 75c.(using a thermometer)
- Once cooked remove from the oven and lightly cover with alfoil, allow the chicken to rest for 10 minutes.
