Rum Balls

A perfect addition to any Christmas celebration!

Disclaimer: These do contain alcohol, so over 18’s only.

We recommend that you allow these to sit for 2-3 days before eating so the flavour can really shine. It will make a big difference, but if you cannot wait, you can eat them straight away.

Ingredients

  • 340grams vanilla wafer biscuits
  • 1 1/2 cups almonds
  • 3/4 cup icing sugar
  • 1/4 cup of cocoa (dutch processed)
  • 1/2 cup Malibu Rum
  • 3 tbsp light corn syrup
  • extra icing sugar or sprinkles for coating

Instructions

  1. In a blender or food processor blend wafers and almonds until the consistency is almost powder form.
  2. Pour into a large bowl and add icing sugar, cocoa, and mix until well combined.
  3. With a spatula mix in rum and corn syrup until combined.
  4. With your hands begin rolling the mixture into 2.5cm balls and roll in icing sugar or sprinkles coat evenly.
  5. Place rum balls in an airtight container for 2 to 3 days to develop the flavor.
  6. Roll in icing sugar or sprinkles again before serving.
  7. Enjoy and have a very merry Christmas!
