Bacon And Egg Breakfast Muffin

Simple and easy to make these are a super tasty way to start the day!

Ingredients

  • Butter
  • 2 English muffins
  • 2 slices bacon
  • 2 eggs
  • 1/2 cup water
  • 2 slices American cheese or you can use cheddar or swiss cheese

Instructions

  1. Cut open English muffins and lightly toast them in the toaster.
  2. Use a cup or egg ring to cut the bacon into a circle. In a non-stick pan melt, 2 tsp of butter cook the bacon for 1-2 minutes on each side or until it begins to brown.
  3. While the Canadian bacon is cooking, remove the English muffins from the toaster and butter.
  4. Lay the bacon on the bottom of the English muffin.
  5. Add 1 tbsp of butter into the non-stick pan. Using egg rings (or jar lids upsidedown) lightly spray them with non-stick spray, and place them into the pan.
  6. Crack Both eggs into each egg ring. Using a fork, break the yolk and lightly mix the egg around.
  7. Pour the water into the pan, and place a lid on top. Cook for about 2 minutes or until set.
  8. Remove the eggs and place them on top of the bacon.
  9. Top each egg with one cheese, then add the lid of the muffin.
  10. Wrap each muffin in baking paper and rest for 30 seconds, serve up.
  11. Enjoy!
