Simple and simply delicious!
These tartlets are easy to make and if you don’t have the option of fresh peaches you can use tinned. Also if peaches are not your thing apricots also work a treat!
Ingredients
Tartlets
- 1 sheet puff pastry (Thawed)
- 1 egg (beaten well)
- 2 large fresh peaches
- 2 tbsp caster sugar
- 1 tbsp Plain Flour
- 1/4 tsp cinnamon
- 1/4 tsp vanilla extract
- 1/4 cup almond flakes
Glaze
- 1 1/2 cups icing sugar
- 2 tbsp whipping cream
- 1 pinch of salt
- 1/4 tsp vanilla extract
- 2-3 tbsp melted butter
Instructions
- Move the oven rack to the centre and preheat the oven to 200c, and line a baking tray with baking paper.
- Cut the sheet of pastry into 9 squares and place it on the tray, leaving about a 3cm gap between each piece.
- Beat the egg in a small bowl and set it aside.
- Cut the peaches into 1cm thick slices and place them in a mixing bowl. Add in sugar, flour, cinnamon, and the vanilla extract, gently fold together with a spatula.
- On each pastry square layer 3 to 4 peach slices over the centre. Brush the pastry edges generously with the egg. Sprinkle with almond flakes.
- Bake for 19 minutes or until puffed and golden at the edges, Remove from oven and let cool on the pan for 10 min.
- While the tartlets are cooling.
- Combine all glaze ingredients in a bowl and stir together until there are no lumps. (To adjust the consistency, add more or less cream until desired consistency has been reached)
- Generously drizzle the tartlets with the glaze mixture while still warm. Serve up
- Enjoy!
