These white chocolate macadamia nut cookies will be a new big hit. Not only will the plate be cleared before you know it, but you will probably be asked for the recipe!
Who doesn’t love a good white chocolate macadamia nut cookie…? we do! These cookies are delicious and perfect for any time of year. Make them for birthdays, dinner parties, and even Christmas.
Ingredients
- 1/2 cup of butter
- 1/2 cup of shortening
- 3/4 cup light brown sugar
- 1/2 cup castor sugar
- 2 large eggs
- 1/2 Tsp vanilla extract
- 1/4 Tsp almond extract (this is optional)
- 2 1/2 cups plain flour
- 1 Tsp baking soda
- 1/2 Tsp salt
- 1 cup coarsely chopped macadamia nuts
- 1 cup coarsely chopped white cooking chocolate or white chocolate chips
Method
- Preheat the oven to 175c fan-forced.
- In a large bowl, cream together the butter, brown sugar, and white sugar until smooth.
- Beat in the eggs, one at a time, then stir in the vanilla and almond extracts.
- In a separate bowl combine the flour, baking soda, and salt.
- Gradually stir the dry mix into the creamed mixture
- Mix in the macadamia nuts and white chocolate.
- line a tray with baking paper and drop dough by teaspoonfuls onto the tray.
- Place in the fridge for 10-15 min before baking.
- Bake for 10min or until the edges go golden brown.
- Remove and allow to cool and firm up before serving.
