The Best Potato Salad

This salad is so good people will be asking you for the recipe!

This a family recipe passed down through generations in my family, and I’m here today to share it with you!

Ingredients

  • 1kg of blue potatoes washed
  • 1 x 440gram jar of mayonnaise ( we recommend S&W whole real egg mayonnaise, you can add more mayo if you prefer.)
  • 300 grams bacon (streaky or middle bacon is recommended)
  • 1/2 bunch spring onions
  • 1/2 tbsp oil
  • 5 eggs
  • 1 tsp salt

Instructions

  1. Cut the potatoes into 5 x 5cm cubes and pop them into a pot with the salt.
  2. Fill the pot with water, just enough to cover the potatoes, and put it on the stove over high heat.
  3. Bring to a boil, then turn the heat down and simmer for about 6-8 minutes. Or until the potatoes are soft but still hold their form.
  4. Drain and allow to sit aside and cool.
  5. Add the egg into a pot and fill it with water. Bring to a boil, then simmer for 6-8 minutes.
  6. Remove from heat and drain boiling water. Rinse with cool water until the eggs and pot are have cooled down.
  7. Start peeling the eggs(it may be easier to peel under running water).
  8. Cut eggs into quarters and set them aside.
  9. Dice bacon and spring onions finely. (use all of the spring onion)Heat a large pan over medium-high heat with oil and add in bacon and spring onions.
  10. Continue cooking until bacon starts to become a little golden.
  11. In a large bowl, add potatoes, bacon, spring onions, eggs, and mayonnaise, and gently mix all of your ingredients.
  12. Scoop salad into your serving bowl.
  13. Enjoy!
