Smashed Avocado and Feta With Poached Eggs

What is better than a delicious breakfast? one that is super quick to make!

We have added pepper as the topper for this, but we recommend you try out adding some chili flakes, smoked paprika or even a good dollop of Krunchilli!

Ingredients

  • 1 Thick slice of sourdough bread (your choice)
  • 1/2 Small avocado
  • 2 Eggs
  • 80g Of Danish feta (or more if you prefer)
  • Butter
  • Pepper to taste
  • 1 Tbsp white vinegar

Instructions

  1. In a small bowl combine the feta and avocado until evenly mixed and set aside.
  2. In a pot fill it water but leave a small gap between the top and the water, bring the water to a boil. Then reduce the heat to a simmer.
  3. Stir the vinegar into the water and create a vortex. Add the eggs to the middle of the vortex and cook the eggs for 3 minutes.
  4. Toast the sourdough in the toaster to your liking. If you have time before the eggs are cooked, butter the toast.
  5. Remove the eggs with a slotted spoon and allow it to drain to remove any excess water. Place the eggs on a small plate or bowl.
  6. Gently spoon over the avocado mixture onto the toast so it covers it evenly. Add your poached eggs on top and crack your desired amount of pepper over the eggs. (the feta is salty so taste before you add any salt)
  7. Enjoy!
