Pork Belly With Smoked Salt

Perfect for an easy dinner

Note: If you want to cook a different size pork belly, the cooking time is 25 minutes for every 500g when you turn the oven down to 160c. The 30 minutes on 220c stays the same regardless of the size.

Ingredients

  • Boneless pork belly 1.5kg
  • 2 tbsp smoked salt
  • 2 tsp freshly cracked pepper

Instructions

  1. Preheat the oven to 220c
  2. Lightly score the skin of the pork belly one end to the other.(Do not cut through to the meat)
  3. Sprinkle the salt and pepper onto the pork belly, massage it evenly into the skin and into the cuts previously made.
  4. In a baking tray add a wire rack and place the pork belly onto the wire rack.
  5. Make sure the oven is fully preheated before adding the pork.
  6. Place the pork in the oven and cook for 30-35 minutes.
  7. Then turn the heat down to 160c and cook for 1 hour and 15 minutes. Before you fully remove the pork belly from the oven, use a meat thermometer to check the temperature. When it reads 62c remove from the oven.
  8. Remove from the oven and lightly tent with foil. Enough to keep the heat in but not to seal in the moisture.
  9. Rest for 10-20 minutes.
  10. Cut up and serve.
  11. Enjoy!
